Tuna salad getting old? Bored with grilled cheese? Can’t look at another plate of mac and cheese? me too. Even veggie pizza is wearing thin.

So I dug out some of my cookbooks and found some forgotten treasures that I hope to use this week and next!

The first is from a cookbook my sister got me for Christmas a few years back: Fabulous ’50s Recipe Collection (Favorite Brand Name Recipes)
Easy Three Cheese Tuna Souffle page 136
4 cups large croutons
2 1/2 cups milk
4 large eggs
1 can cream of celery soup
3 cups shredded cheese (Cheddar, Monterey Jack and Swiss)
7 oz of Tuna
1 tbs butter or margarine
1/2 cup celery
1/2 cup onion
1/4 mushrooms siced.

You spray a 13 x 9 inch baking dish (I’m doubling the recipe so I use a larger pan) arrange the croutons. In a separate bowl beat milk, eggs and soup, stir in cheeses and tuna. Put that all aside and in a small skillet melt the butter add the celery onion and mushrooms and saute until the union is soft. Then put the vegies over the croutons, and pour the eg-tuna mixture on top. Now this is where you have to plan ahead a bit- refrigerate overnight. Take it from the fridge about an hour before baking. Bake at 325 for 45 to 50 minutes or until hot and bubbly.

I’m going to lighten the recipe a bit with skim milk, low-fat cheese, and low-fat margarine.

From the same book I’m going to try Spinach and Egg Casserole
10 ounces of frozen chopped spinach
1 can cheddar cheese soup
1 tbs mustard
4 hard boiled eggs.

Now this recipe calls for ham, but for a Lenten meal, I’m leaving that out
Cook the spinach according to the package directions.
Stir in soup and mustard
pour into a baking dish and top with eggs
Bake 15 to 20 minutes or until heated through.

We’ve actually had this before and it was REALLY good.

Of course, I think it goes without saying that for Rosie I will have some boxes of yogurt and PBJ on standby, in case she won’t eat any of this stuff! But the rest of the family will love it.
