Turkey Enchilladas – sounds delicious!

3 cups shredded Pepper Jack cheese
1 can condensed cream of chicken soup
1/2 cup milk
6 8′ flour tortillas

Combine turkey and cheese and set aside. Combine milk and soup, beat until smooth, and set aside. Place 1/2 cup or more turkey mixture on each tortilla and roll. Place, seam side down, in a sprayed or greased slow cooker. Pour soup mixture over the enchiladas covering them completely. Sprinkle remaining turkey over the top. Cook on High for 2 hours.

Makes 4 servings. I triple the recipe (but only double the cheese and sauce) for our family. The cheese makes the recipe spicy enough for me, but if you like more heat, add minced peppers. Remember, slow cookers tend to draw out spices.”
